NORMAL OPERATING TEMP ????

I have question hopefully somebody can help me out. I have a 1972 Grand Sport with a 455 engine. What is the normal operatirng temp for this year Buick ? I have two electric cooling fans that I operate manually. I want to install an auto set up for the fans, but I dont know what temp to have them come on and what temp to have them shut off. And if I install an auto fan set up, is there something I can use so if I go inside the store and the fans remain on they will not drain my battery when I come back out. Any advice would be greatly appreciated Thanks.

I have a '72 462" Stage1 that runs at 180 going down the hiway 65-70.
If i get caught in traffic it might go up to 200-210 but goes right back to 180 when I start to move at hiway speed again.
